- 2 lbs. ground beef
- 2 packets of taco seasoning
- 2 cups water
- 1 can whole kernel corn, drained
- 1 can black beans, rinsed
- 1can ranchero beans
- 1 can green chiles
- 2 cans diced tomatoes
- shredded cheese (I like Sargento Bistro Blends with Taco Seasonings.)
- sour cream
Brown meat and drain. Return to pan and add 2 packets of taco seasoning and 1 cup water. Cook on medium heat for 5 minutes, stirring to mix in seasoning. Meanwhile, in large pot add corn, black beans, ranchero beans, green chiles, and diced tomatoes. Add 1 cup water and stir together. Heat on medium-high heat. Add meat and continue to cook on medium-high heat until heated through, stirring occasionally. Dish into soup bowls, add shredded cheese and a dollop of sour cream. Enjoy!
