Taco Soup Recipe

  • 2 lbs. ground beef
  • 2 packets of taco seasoning
  • 2 cups water
  • 1 can whole kernel corn, drained
  • 1 can black beans, rinsed
  • 1can ranchero beans
  • 1 can green chiles
  • 2 cans diced tomatoes
  • shredded cheese (I like Sargento Bistro Blends with Taco Seasonings.)
  • sour cream

Brown meat and drain.  Return to pan and add 2 packets of taco seasoning and 1 cup water.  Cook on medium heat for 5 minutes, stirring to mix in seasoning.  Meanwhile, in large pot add corn, black beans, ranchero beans, green chiles, and diced tomatoes.  Add 1 cup water and stir together. Heat on medium-high heat. Add meat and continue to cook on medium-high heat until heated through, stirring occasionally.  Dish into soup bowls, add shredded cheese and a dollop of sour cream.  Enjoy!

This is a super yummy, cozy soup that comes together quickly and the leftovers in your lunch the next day are even better!
