Working Mom Meal - Marmalade Mustard Chicken

This is what we had for dinner the other night.  Super easy, healthy, and yummy!

I love this rice mix.  It is delicious and makes the whole house smell wonderful when it is cooking.

Prepare rice as instructed on package.  You will need to start this right away because it takes about an hour to prepare. Worth the wait, though.

Marmalade Mustard Chicken

4 boneless chicken breasts
1/2 cup orange marmalade
1/2 cup mustard
*More or less mustard can be added to reach desired taste.

Bake the chicken at 350 for 45 minutes.  When there is about 10 minutes left in baking time, mix the marmalade and mustard in a sauce pan.  Warm on medium heat, stirring constantly.  Remove chicken from oven and pour marmalade mixture over the chicken breasts. 

Serve chicken with rice (could put the chicken on the rice) and a toss salad.  Like I said - easy, healthy, and yummy and my kids loved it.

  1. This sounds delicious. I love pairing mustard with something sweet, and I always use honey, but love the idea of using marmalade! Thanks for the idea!
