The blackberries in my in-laws woods are so abundant right now, it is amazing!
The blackberries are so plump and perfect. It is easy to fill your bucket with lots of these ripe, delicious treats.
We picked a huge bucket of them the other day and after eating many freshly picked, we delivered a bowlful to one of our neighbors and made a pie for ourselves and another neighbor.
I used my mother-in-law's recipe which is just scrumptious...
- 1 graham cracker pie crust
- 8 oz. cream cheese, softened
- 1 cup of sugar
- 1 small box of Berry Blue Jell-O
- 1 large tub of Cool Whip
- 2 cups fresh blackberries
In large bowl combine cream cheese, sugar, and 1/2 the tub of the Cool Whip. Mix together until smooth. Spread evenly in pie crust. Prepare Jell-O as directed on box. Allow to get firm in refrigerator about 1.5 hours. When firm, remove from fridge and gently mix the blackberries into the gelatin. Spread blackberry/gelatin mix over the cream cheese mixture in pie crust. Add the remainder of the Cool Whip to top of pie. Add a couple blackberries to garnish. Enjoy! Refrigerate leftover pie.
I had so many blackberries that I let the kids each make their own little pie using mini graham cracker pie crusts. They loved helping and having their own special dessert!
