Working Mom Meal - Pizza Cupcakes

I am pretty tired when I get home from work every day and I am always looking for fast, easy dinner ideas that will make everyone happy. Here is one of our favorites - Pizza Cupcakes!
Here is how you make them...
Ingredients Needed
-Pam Cooking Spray
-refrigerated biscuit dough (you can use Pillsbury Grands Biscuits but split them in half!)
-pizza sauce
-shredded mozzarella cheese
-desired pizza toppings: pineapple, ham, sausage, bacon, green pepper, onion, etc.
Spray a cupcake pan with Pam Cooking Spray. Press one (raw, straight from tube) biscuit down into each cupcake hole. Press it and shape it along the sides and bottom of each hole to create a sort of dough "cup." Fill cup with pizza sauce. Top with shredded mozzarella cheese and other chosen toppings. Bake at 350 for about 20 minutes. The cheese should be melted and the edges should be a bit golden brown. I usually cut one in half to make sure the dough is fully cooked in the middle. If it is not, return it to the oven for a few more minutes. Twenty minutes usually works though!
To make the meal complete (and add some healthy to it) I made a big salad with a prewashed salad mix and added Zima tomatoes (they are sweet and very yummy!) and cucumbers. I also sliced up some apples and served those with dinner too.

 Very fast and easy dinner for my family. The pizza cupcakes are so easy and my kids think they are such a special treat! I mean with a name that includes PIZZA and CUPCAKES in it, of course it is a special treat!
And dinner is served...
